Awarma (Preserved Meat a La Libanaise)

The winter season in Lebanon is very cold, especially in the mountains. Back in older times, villagers used to preserve the meat cultivated in the summer to cook it during the cold season. Awarma can last for one year when kept in the fridge. Although people are no longer isolated enough to worry about it, especially in the city,  Awarma is still found in many homes. It is usually cooked with egg, kishk or even over hummus.

It is very important that everything you use for cooking is very dry. Make sure to keep away from water while cooking and preserving.

Ingredients:

  • 1 kilo lean beef, cut into very small cubes (about 1/2 cm)
  • 1/2 kilo sheep fat, (the best part is the fat found in the tail area, but if not available, you can use other part)
  • 1 tablespoon sea salt
  • 1 teaspoon pepper or seven spices

Preparation:

  • In a pot, and on a low fire, place the fat and let it melt very slowly; when the fat is halfway cooked, add half the salt
  • When the fat is completely melted, add the meat, and cook stirring always, to allow the meat to cook evenly
  • Season with salt and pepper, cook on a low fire until the meat is well cooked
  • When cooked, place the meat in jars, and keep in cold dry place. You can refrigerate it also.

After it is prepared, you can store it for several months. It is best eaten alongside something else. I prepared it with scrambled eggs 🙂

Stuffed Intestines (Fwaregh)

This is one of the most exquisite traditional Lebanese Meals. In the old days people would use every piece of the sheep – waste not, want not. After making sure they used all the meat for cooking in many different ways, they used the wool, the head, the bones, etc… and even the intestines. They found a way to stuff it and cook it in a DELICIOUS recipe. When my mother used to make it, every body knew that she was making Fwaregh for lunch, because while cooking, this meal has a very special and nice aroma.

The main work consists of cleaning the intestines. It has to be washed in running water several times. The extra fat stocking on the sides shall be removed, keeping the small parts because it helps keep it moist while cooking. After washing (from inside and outside) it should be rubbed with salt and water, then soak in water and white vinegar for an hour (1 cup of vinegar for 4 cups of water). Now it is ready for stuffing and cooking.

Ingredients: (for two whole intestines):

  • 300 grams of minced meat, beef or lamb (I used beef)
  • 2 cups of small grain rice
  • 1 teaspoon salt
  • 1/2 teaspoon seven spices
  • 1 cup of soaked chick peas ( or 1 cup of pine seeds, as you desire)
  • 1 medium onion, choppped
  • 1 tablespoon vegetable oil
  • 1 peeled onion
  • 1 cinnamon stick
  • 3 bay leaves
  • 1 teaspoon salt

Preparation:

  • Heat the oil in a saucepan and fry the meat for few minutes ( until it changes color only)
  • Wash the rice, mix it with meat, chopped onion, chick peas then add the salt and spices
  • Hold the intestine from the smaller end, then start stuffing, pushing it into the opening of the intestines with your thumb. This way, when you finish stuffing the intestine will be inside out
  • When all the quantity is finished, place them in a large bowl and wash them again, now they are ready to be cooked
  • Place the stuffed intestines in a large pot, cover with a lot of water and boil on a high fire. Remove the white foam formed on the top, add 1 peeled onion, cinnamon stick,salt, 3 bay leaves and cook on a very reduced flame for about 45 minutes, until the intestines are tender
  • Serve it with crushed 2 cloves of garlic mixed with 1/2 teaspoon salt, juice of 2 lemons and few drops of extra virgin olive oil, or with red vinegar.

Hummus with Ras Asfour

I believe that everybody is familiar with our traditional plate Hummus (Chick Peas with Tahini). Lebanon entered the Guinness Book of World Records when our Lebanese Chef’s prepared the biggest plate of Hummus ever. However, I don’t think that many of you know what is Ras Asfour, which translated literally means “the head of the bird”. Ironically, it is actually sheep’s meat cut into small sized pieces, nearly as big as a bird’s head, hence the name. Today I made a plate combining hummus with the Ras Asfour meat.

I brought the meat from the butcher in small cuts and I cut it into even smaller pieces. Sheep meat is not lean, so I had to remove some of the fat, but leave enough to keep the meat tender.

Note that you can eat these two separately and each will taste delicious on it’s own.

Ingredients for the Hummus:

  • 2 cups of chick peas
  • 1 teaspoon of baking soda
  • 1 cup of Tahini
  • 3 lemon squeezed, salt
  • 2 clove of crushed garlic

Preparation for the Hummus:

  • Soak the chick peas in a large bowl of water and baking soda, for 12 hours at least. The peas will increase volume after soaking.
  • Drain them from the water, wash thoroughly and boil in salted water. It will take about one hour and a half for the chick peas to be cooked. When you see a white foam forming on the top of the water, remove it and keep boiling
  • When the chick peas are soft, drain from the water again and mash them, you can use whatever you have for this purpose (a food processor, blender, etc)
  • Add the crushed garlic, the salt, the Tahini and the lemon juice and mix well. Adjust the taste of salt and lemon as you desire

Now that the Hummus is ready you can prepare the meat of Ras Asfour.

Ingredients for the Ras Asfour meat:

  • 200 grams of tender sheep meat cut into small size
  • 1 small onion finely chopped
  • 1 tablespoon of grenadine of molasses
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt, 1/2 teaspoon seven spices

Preparation:

  • In a small saucepan heat the oil and fry the onion
  • When it becomes golden color add the meat and fry until it turns very dark, add a small cup of water and cover, let it cook on very low heat until the meat is tender
  • When it is done add the salt, seven spices and the grenadine of molasses

Now that you have everything ready, place the chick peas in a plate, On he top put the cooked meat. For decoration and taste, add some fried pine seeds on the top of the meat and some olive oil.
