Potato Stew With Meat

When me and my siblings were young, and for as long as I remember my mother used to make this meal at least once a month. She liked to have HEALTHY children. And by healthy I mean she wanted us to be  fat!

Regardless, there is nothing more comforting than tucking into a bowl of hot stew, especially as the warm weather starts to cool down and we need crave some warming comfort food. We Lebanese always serve our stews with rice, but if you feel that you would rather not it tastes just as good without.

Ingredients:

  • 1 kg potatoes
  • 200 grams beef cube
  • 1/2 cup fresh coriander, finely chopped
  • juice of 1 lemon
  • 4 cloves of garlic, crushed
  • 1 teaspoon dried coriander
  • 2 teaspoons salt
  • 1 teaspoon seven spices
  • 1 tablespoon tomato puree
  • oil for frying
  • 2 tablespoon canola oil

Preparation:

  • In a large pot of pressure cooker, heat 1 tablespoon oil and fry the meat, add 1 teaspoon salt, half teaspoon seven spices, cover with 6 cups water and cook until tender
  • Peel the potatoes and cut them into cubes
  • Heat the frying oil, fry the potatoes until golden, remove the potatoes from the oil and place on a kitchen towel to absorb the excess of oil
  • In a pot, place the cooked meat, cover them with some of the meat stock, add the potatoes and the tomato puree, and let it cook on medium fire
  • In the meantime, heat the remaining tablespoon of oil in a casserole, mix the crushed garlic with the fresh and dried coriander, fry them in the casserole
  • When the stew starts boiling add the fried garlic and the lemon juice and let it cook on low fire or further 5 minutes
  • Serve with cooked rice

Ablama With Laban (Stuffed Zucchini With Yogurt)

Zucchini is one of the vegetables which can be cooked in many different ways. I posted once zucchini stuffed with meat and rice. Today I prepared it the way my grandmother used to make it, stuffed with meat and cooked with yogurt. It was one of my favorite foods when I was a child. My mother used to make it in tomato sauce, and both ways are DELICIOUS. But, since today I had a lot of fresh yogurt, I decide to prepare it as per my grandmother’s recipe.

By the way “ablama” means in Arabic “ahead of time”, but I have no idea why it is called as such 🙂

Ingredients:

  • 1 kilo zucchini, small size
  • 200 minced meat
  • 1 medium onion, finely chopped
  • 1 handful pine seeds
  • 1 kilo yogurt
  • 2 tablespoons corn flour
  • 10 cloves garlic, crushed
  • 1 tablespoon dried mint
  • salt, 7 spices
  • canola oil
  • cooked rice

Preparation:

  • Wash the zucchini, cut the head and with a vegetable corer remove the insides and drain them
  • In a saucepan heat 1 tablespoon of oil and fry the chopped onion and pine seeds until slightly golden then add the meat and fry. Season with 1 teaspoon salt and 1 teaspoon spices
  • Fill the zucchinis with the cooked meat until you have filled them all
  • Heat 2 tablespoon of oil and fry the stuffed zucchini until slightly colored, put on a kitchen towel to absorb the excess oil

  • Place the zucchini in a pot, cover with water and cook on a medium fire, when the water boils reduce the fire, cover and let it simmer for about 5 minutes, then drain

  • In another pot mix the yogurt with 2 tablespoons corn flour dissolved with 1 cup water
  • Place on fire, stirring constantly with a whisk until the yogurt starts boiling
  • Mix the crushed garlic with 1 teaspoon salt and the dried mint then fry gently in a small frying pan with 1 teaspoon of oil and add it to the boiled yogurt

  • To serve place cooked rice on a plate, add the stuffed zucchini and cover with the cooked yogurt

Makmoura (Rice with Cabbage)

This meal is very special to me. It reminds me of my childhood as my grandmother prepared it often, and I always enjoy eating it with a cabbage salad. Also, once when I was pregnant with my youngest boy (my fourth child:), I had a nap in the afternoon and when I woke up craving something with cumin. It is all about cumin. When I woke up, I cooked this Makmoura and on my plate I have to add a big tablespoon of cumin to satisfy my desire. Until now, I like this meal a lot. And I am so glad to share it with you, it is very simple to prepare.

Ingredients:

  • One medium cabbage
  • 1 medium onion, finely chopped
  • 8 to 10 cloves of garlic
  • 2 cups rice
  • 1 teaspoon salt
  • 1 tablespoon cumin
  • 1 tablespoon olive oil

Preparation:

  • Remove the leaves of cabbage, wash and thinly slice, remove about half for the salad
  • Heat the olive oil, fry the onion until translucent, add the garlic then the cabbage, cover the pot and let it cook for about 5 minutes
  • Add the rice, cover with 4 cups of water, season with salt and cumin. When it starts boiling lower the fire, cover and let it simmer gently until the rice is well cooked
  • Serve with cabbage salad: put the cabbage in a bowl and mix with 1 clove garlic crushed, 1 teaspoon salt, juice of one lemon and extra virgin olive oil

Mdardra (Rice with Lentils)

I like the sound of the word “Mdardra”, I think it is musical. I remember when I was a little girl, I made up a song for this dish. And every time my mother used to cook it I sang it for her, making up words to a known Lebanese tune. My mother thought it was cute at first and sang along with me, but after the millionth time, she threatened to never cook it again unless I stop! I think I was singing badly or something…

This is a very simple meal in that its made with two main ingredients: rice and lentils, the same ingredients used to make mjaddara. Like most old Lebanese dishes, it originated from the villages where food was scarce. Somehow it remained very popular and is now a common dish to be had in a Lebanese home.

Ingredients:

  • 1 cup of lentils
  • 1 cup of rice (long grain)
  • 1 small onion finely chopped
  • 1 teaspoon salt + a pinch of salt
  • 1/2 teaspoon cumin
  • 1 tablespoon olive oil
  • 2 onions sliced
  • 1 cup frying oil

Preparation:

  • Place the lentils in a pot, cover with about 5 cups of water and boil until it is half-cooked then discard the water
  • In another pot, heat the olive oil and fry the onion finely chopped until transparent
  • Add the half-cooked lentils to the onion with the rice, salt and cumin; cover with 2 cups of water and let it cook on a very low heat until the rice is cooked and the water absorbed
  • In a saucepan, heat the frying oil to fry the sliced onions until brown. Sprinkle with a pinch of salt for crispiness but be careful not to burn them
  • In a serving plate, place the rice with lentils and add the fried onions on top
  • Enjoy eating with plain yogurt or salad

Rice and Chicken (Lebanese Way)

Arabs love this dish! If you have an Arab friend, make this dish when you invite them over; it will guarantee to make them smile 🙂 Every Arab country has their own variation of it and is generally cooked during special occasions. The combination of the rice cooked with chicken stock and the fried nuts spread on the top of the plate gives it a special flavor and texture in your mouth. Some people like it covered in gravy but personally, I like it with yogurt. Try it both ways, tell me which way you prefer 🙂

Ingredients: for boiling the chicken

  • 1 whole chicken (about 1 kilo)
  • 1 tablespoon salt
  • 1 cinnamon stick
  • 1 teaspoon seven spices
  • 1/2 teaspoon clove
  • few bay leaves
  • 1/2teaspoon whole cardamon
For cooking the rice:
  • 200 grams minced meat
  • 2 cups long grain rice
  • 1/2 teaspoon seven spices
  • 4 cups chicken stock
  • 1 tablespoon corn oil

For the decoration:

  • 1 tablespoon butter
  • handful of each: halved almonds, pine seeds, pistachios, cashew
  • a pinch of ground cinnamon

Preparation:

  • Place the chicken in a large pot, cover with about 2 liters of water, place on fire and let it boil.
  • Skim the white foam. Then put the salt, cinnamon stick, clove, cardamon and seven spices and let it boil until tender (in pressure cooker it will take 15 minutes)
  • When boiled, drain the chicken from water (but keep the stock) and tear the chicken meat from the bones and keep aside
  • In another pot, heat the oil and fry the minced meat until brown, season with salt and seven spices
  • Add the rice and cover with 4 cups of chicken stock, cover the pot and let it simmer on a low fire until the rice is cooked
  • In a saucepan heat the butter and fry the nuts until nice golden, stirring constantly to prevent them from burning then place on a kitchen towel
  • To serve place the rice in a large plate, put the chicken pieces on the top, sprinkle with cinnamon then cover with the fried nuts
  • Enjoy eating with a side salad (and yogurt or gravy, whatever you prefer)

Stuffed Intestines (Fwaregh)

This is one of the most exquisite traditional Lebanese Meals. In the old days people would use every piece of the sheep – waste not, want not. After making sure they used all the meat for cooking in many different ways, they used the wool, the head, the bones, etc… and even the intestines. They found a way to stuff it and cook it in a DELICIOUS recipe. When my mother used to make it, every body knew that she was making Fwaregh for lunch, because while cooking, this meal has a very special and nice aroma.

The main work consists of cleaning the intestines. It has to be washed in running water several times. The extra fat stocking on the sides shall be removed, keeping the small parts because it helps keep it moist while cooking. After washing (from inside and outside) it should be rubbed with salt and water, then soak in water and white vinegar for an hour (1 cup of vinegar for 4 cups of water). Now it is ready for stuffing and cooking.

Ingredients: (for two whole intestines):

  • 300 grams of minced meat, beef or lamb (I used beef)
  • 2 cups of small grain rice
  • 1 teaspoon salt
  • 1/2 teaspoon seven spices
  • 1 cup of soaked chick peas ( or 1 cup of pine seeds, as you desire)
  • 1 medium onion, choppped
  • 1 tablespoon vegetable oil
  • 1 peeled onion
  • 1 cinnamon stick
  • 3 bay leaves
  • 1 teaspoon salt

Preparation:

  • Heat the oil in a saucepan and fry the meat for few minutes ( until it changes color only)
  • Wash the rice, mix it with meat, chopped onion, chick peas then add the salt and spices
  • Hold the intestine from the smaller end, then start stuffing, pushing it into the opening of the intestines with your thumb. This way, when you finish stuffing the intestine will be inside out
  • When all the quantity is finished, place them in a large bowl and wash them again, now they are ready to be cooked
  • Place the stuffed intestines in a large pot, cover with a lot of water and boil on a high fire. Remove the white foam formed on the top, add 1 peeled onion, cinnamon stick,salt, 3 bay leaves and cook on a very reduced flame for about 45 minutes, until the intestines are tender
  • Serve it with crushed 2 cloves of garlic mixed with 1/2 teaspoon salt, juice of 2 lemons and few drops of extra virgin olive oil, or with red vinegar.

Wrapped Rice With Meat and Peas

I couldn’t come up with a different name for this recipe. Today, I had in mind to make rice with meat in our traditional family way. But I made a twist to the recipe, to make it more attractive 🙂 Usually I cook the minced beef with rice with a sauce on the side and some roasted almonds, pistachios and pine seeds on the top. So instead of making it as usual, I had the idea to make a wrap out of it.

Ingredients:

  • 150 grams minced beef
  • 1 medium onion, finely chopped
  • 1 handful of pine seeds
  • 1/2 cup frozen peas
  • 1 cup of long grain rice
  • 1 teaspoon salt for the meat+1 teaspoon salt for the rice
  • 1/2 teaspoon seven spices
  • 1/2 teaspoon cinnamon
  • a dash of black pepper
  • 1 tablespoon canola oil
  • 5 spring rolls dough
  • 1 tablespoon of melted butter

Preparation:

  • Heat the oil in a pot and fry the onion until golden then add the pine seeds and fry for another 3 minutes
  • Add the meat to the onion and continue frying until brown, season with 1 teaspoon salt, seven spices; then add the peas, reduce the heat, cover the pot and let it cook for about 5 minutes
  • Put the rice over the meat and cover with 2 cups of water. Add the remaining salt, cinnamon and black pepper and let the rice cook slowly until it absorbs all the water
  • Preheat the oven to 180C
  • Brush a small sized bowl with the melted butter and place one sheet of spring roll dough. Fill it with the rice and meat, then fold the dough to cover it and brush the top with butter
  •  Place it facing down on a tray and brush it again with butter
  • Place the tray in the oven for about 7 minutes or until the dough turns a light golden color
  • Serve it hot with yogurt

Stuffed Vine Leaves in Oil ( Warak Inab Bilzeit)

This is a vegetarian recipe, and I must say that Stuffed Vine leaves in Olive Oil is an essential dish from our rich Lebanese Mezze. It is so delicious and light that you can easily eat a small plate alone before having your main meal. Last week when I brought a large quantity of fresh vine leaves to make them stuffed with meat and cooked with lamb cutlets, I  was left with a lot. So I put the remaining in the freezer, where they can usually last up to six months. When we had the family lunch I took a pile from the vine leaves and made them the vegetarian way. And believe me my children made them disappear within just few minutes.

Ingredients:

  • 100 grams of vine leaves, blanched and ready to cook ( you can use the preserved ones too)
  • 1/2 cup of short grain rice
  • 2 tablespoons of parsley, finely chopped
  • 1 small onion, finely chopped
  • 1 medium red tomato, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon seven spices
  • 2 teaspoons lemon juice
  • 1 teaspoon extra virgin olive oil+ one extra tablespoon for cooking
  • your choice of thinly sliced vegetable, such as onion, tomato, carrot or even potato (I used sliced onions)

Preparation:

  • Prepare the stuffing by mixing the washed rice with the parsley, onion, tomato, salt, spices lemon juice and the olive oil well
  • Place a vine leave face down and stuff it with one teaspoon of the mixture of rice for filling in the center, fold the two sides toward the center then roll it in a cigar shape
  • When you finish all the quantity of the vine leaves and stuffing, prepare the pot, place the tablespoon of olive oil in the bottom of the pot, cover the base of the pot with your choice of sliced vegetable, place all the stuffed vine leaves in the pot
  • Pour water to cover the vine leaves by about one inch, place a plate upside down over them to prevent the vine leaves from opening during cooking. Adjust the salt and lemon as desired
  • Cook on a medium heat and when it starts boiling reduce the fire and let it cook gently for about 25 minutes until the rice is cooked and tender
  • Turn upside down on a plate and it’s ready to serve

Stuffed Vine Leaves and Lamb Chops

Vine leaves are abundant in Lebanon, and we have a lot of wine products well known internationally. The vine leaves can be stuffed either with minced meat and rice or with rice and vegetable, it can also be eaten raw with our Tabbouleh, instead of lettuce or cabbage.

This meal is very popular also in all the Mediterranean countries, and every country has its own special way of cooking it. Today I prepared it stuffed with minced meat, and cooked it with lamb chops.

Ingredients:

  • 300 grams fresh vine leaves ( if not available you can use the preserved ones)
  • 200 grams minced meat
  • 1 cup short grain rice
  • 1 tablespoon vegetable oil
  • salt, sweet pepper, dash of cinnamon

Preparation:

  • Blanch the vine leaves in boiling water for 2 minutes to soften then drain. If you are using preserved ones just wash in cold water
  • Prepare the stuffing, fry the meat with the oil until brown, then mix with the washed rice and season with 1 teaspoon of salt, 1/2 teaspoon sweet pepper and the cinnamon
  • Place one vine leaf on a working board face down, put a teaspoon of the stuffing in the center fold the sides and roll it
  • Rub the lamb chops with salt and pepper ( as desired) and place them in the bottom of a large pot
  • Tightly place the rolls over the lamb chops, then place an upside down plate over them to prevent opening while cooking
  • Add water and cover by an inch, season with salt, cook on medium heat for 15 minutes, when it starts boiling lower the heat and cook for 20 minutes more or until the rice is soft
  • Serve with yogurt

Stuffed Swiss Chard (Silik Mehchi BelZeit)

In previous posts I used the Swiss Chard to make the soup with lentils, and Mutabbal made out of Swiss chard stalk. But today I prepared the traditional stuffed Swiss chard, which is an alternative to stuffed vine leaves. It  is a vegetarian recipe cooked with extra virgin olive oil. I remember when I was young I used to say to myself that the stuffing looks like tabboule with chick peas, but made with rice instead of bulgur.  🙂

Ingredients:

  • 2 kilos of Swiss chard
  • 2 cups Egyptian rice
  • 1 cup of chick peas, soaked overnight
  • 1/2 cup chopped parsley
  • 3 tomatoes finely diced
  • 2 medium onions finely chopped
  • 1 teaspoon salt
  • 1 teaspoon seven spices
  • juice of 2 lemons
  • 3 tablespoons extra virgin olive oil

Preparation:

  • Remove the Stalk of  the Swiss chard, wash and drain
  • Boil about 3 liters of water in a pot, add some salt
  • Blanch a few leaves of Swiss chard at a time in the boiling water for about a minute, remove and place in cold water directly (boiling of the Swiss chard is delicate, you should be careful)
  • Prepare the stuffing by mixing the washed rice with parsley, chick peas, tomatoes, onions, season with salt, seven spices, add half of lemon juice and one tablespoon of olive oil
  • On a working board, place one leaf of the boiled Swiss chard, place in the center 1 teaspoon of the stuffing and roll it
  • When you finish all the leaves, prepare a pot to cook them
  • Pour 2 tablespoon of olive oil in the bottom of the pot, then thinly slice one onion, one tomato and one potato and place them in the bottom of the pot. Place the stuffed Swiss chard in layers over the slices of the potato, onion and tomato
  • When you finish piling them cover with water by about 1/2 inch, add salt, the remaining lemon juice, then place an upside down plate to hold them down during cooking
  • Put the pot on fire and let it boil, reduce then the fire, cover the pot and let it simmer for about 15 minutes or until the rice is tender
  • Allow to cool, then carefully turn the pot upside down on a serving plate.
