Rocca Salad with Cheese

This salad is the kind you can have it as a side dish, as a starter, even as a breakfast, which is how we enjoyed this time. A very simple dish and so versatile, you can use your favorite kind of cheese, and even the bread.

Ingredients:

  • one bunch of rocca
  • one red tomato
  • a few slices of baguette bread
  • about 150 grams of sliced cheese (I used the goat kashkaval kind)
  • 1 tablespoon thyme
  • 1 teaspoon salt
  • 1 teaspoon balsamic vinegar
  • 1 tablespoon olive oil

Preparation:

  • Preheat the oven to 180 C
  • Put few drops of olive oil over the bread slices, place one slice of cheese on the top, sprinkle with thyme and put in the oven for about 5 minutes or until the cheese melts
  • In a plate place the leaves of rocca
  • Slice the tomatoes and place them around the rocca
  • Place the slices of bread on the top
  • Prepare the dressing by mixing the salt with the balsamic vinegar and the remaining olive oil, pour the mixture over the salad.

Stuffed Swiss Chard (Silik Mehchi BelZeit)

In previous posts I used the Swiss Chard to make the soup with lentils, and Mutabbal made out of Swiss chard stalk. But today I prepared the traditional stuffed Swiss chard, which is an alternative to stuffed vine leaves. It  is a vegetarian recipe cooked with extra virgin olive oil. I remember when I was young I used to say to myself that the stuffing looks like tabboule with chick peas, but made with rice instead of bulgur.  🙂

Ingredients:

  • 2 kilos of Swiss chard
  • 2 cups Egyptian rice
  • 1 cup of chick peas, soaked overnight
  • 1/2 cup chopped parsley
  • 3 tomatoes finely diced
  • 2 medium onions finely chopped
  • 1 teaspoon salt
  • 1 teaspoon seven spices
  • juice of 2 lemons
  • 3 tablespoons extra virgin olive oil

Preparation:

  • Remove the Stalk of  the Swiss chard, wash and drain
  • Boil about 3 liters of water in a pot, add some salt
  • Blanch a few leaves of Swiss chard at a time in the boiling water for about a minute, remove and place in cold water directly (boiling of the Swiss chard is delicate, you should be careful)
  • Prepare the stuffing by mixing the washed rice with parsley, chick peas, tomatoes, onions, season with salt, seven spices, add half of lemon juice and one tablespoon of olive oil
  • On a working board, place one leaf of the boiled Swiss chard, place in the center 1 teaspoon of the stuffing and roll it
  • When you finish all the leaves, prepare a pot to cook them
  • Pour 2 tablespoon of olive oil in the bottom of the pot, then thinly slice one onion, one tomato and one potato and place them in the bottom of the pot. Place the stuffed Swiss chard in layers over the slices of the potato, onion and tomato
  • When you finish piling them cover with water by about 1/2 inch, add salt, the remaining lemon juice, then place an upside down plate to hold them down during cooking
  • Put the pot on fire and let it boil, reduce then the fire, cover the pot and let it simmer for about 15 minutes or until the rice is tender
  • Allow to cool, then carefully turn the pot upside down on a serving plate.

Hummus with Ras Asfour

I believe that everybody is familiar with our traditional plate Hummus (Chick Peas with Tahini). Lebanon entered the Guinness Book of World Records when our Lebanese Chef’s prepared the biggest plate of Hummus ever. However, I don’t think that many of you know what is Ras Asfour, which translated literally means “the head of the bird”. Ironically, it is actually sheep’s meat cut into small sized pieces, nearly as big as a bird’s head, hence the name. Today I made a plate combining hummus with the Ras Asfour meat.

I brought the meat from the butcher in small cuts and I cut it into even smaller pieces. Sheep meat is not lean, so I had to remove some of the fat, but leave enough to keep the meat tender.

Note that you can eat these two separately and each will taste delicious on it’s own.

Ingredients for the Hummus:

  • 2 cups of chick peas
  • 1 teaspoon of baking soda
  • 1 cup of Tahini
  • 3 lemon squeezed, salt
  • 2 clove of crushed garlic

Preparation for the Hummus:

  • Soak the chick peas in a large bowl of water and baking soda, for 12 hours at least. The peas will increase volume after soaking.
  • Drain them from the water, wash thoroughly and boil in salted water. It will take about one hour and a half for the chick peas to be cooked. When you see a white foam forming on the top of the water, remove it and keep boiling
  • When the chick peas are soft, drain from the water again and mash them, you can use whatever you have for this purpose (a food processor, blender, etc)
  • Add the crushed garlic, the salt, the Tahini and the lemon juice and mix well. Adjust the taste of salt and lemon as you desire

Now that the Hummus is ready you can prepare the meat of Ras Asfour.

Ingredients for the Ras Asfour meat:

  • 200 grams of tender sheep meat cut into small size
  • 1 small onion finely chopped
  • 1 tablespoon of grenadine of molasses
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt, 1/2 teaspoon seven spices

Preparation:

  • In a small saucepan heat the oil and fry the onion
  • When it becomes golden color add the meat and fry until it turns very dark, add a small cup of water and cover, let it cook on very low heat until the meat is tender
  • When it is done add the salt, seven spices and the grenadine of molasses

Now that you have everything ready, place the chick peas in a plate, On he top put the cooked meat. For decoration and taste, add some fried pine seeds on the top of the meat and some olive oil.

Tabboule

Tabboule is our Lebanese pride, along with hummus. Lebanon is the record holder in the Guinness Book of World Records when 250 of our Lebanese Chef’s made the biggest plate of Tabboule in the whole world. We Lebanese can and will eat tabboule any place, any time: for breakfast, lunch, as a snack or even at dinner. It is THAT Delicious. The best thing about it is that tabboule is made just from vegetables and bulgur, so anybody can enjoy it and it goes well with most anything!

Ingredients:

  • 2 cups of finely  chopped fresh parsley
  •  few leaves of fresh mint chopped with the parsley, or else they will turn black
  • 1 small onion filnely diced
  • 3 red tomatoes, finely chopped
  • 1 tablespoon of bulgur, fine and dark brown color
  • juice of 2 lemons
  • salt, seven spices, olive oil

Preparation:

  • Wash the chopped parsley with mint and put in a strainer
  • Add the chopped tomatoes to the parsley
  • Mix the chopped onion with a dash of salt and a little seven spices and add it to the mixture of parsley, tomatoes and onion
  • Wash the bulgur and drain it, then add one tablespoon of lemon juice to it
  • Now the Tabboule is ready, season it to your taste with salt, allspice, lemon juice and olive oil
  • Mix it well and put it on a serving plate garnish with lettuce or cabbage

Fun with Zucchini, Part Two: Heart of the Zucchini (Lib el Koussa)

Today I’m gonna teach you what do you with the zucchini insides that you put aside in yesterday’s post.

During the World War II, people in the Lebanese countryside did their best to use everything they had when cooking and leave nothing to waste because they were running out of ingredients to make food. This is the reason why there is a large variety of vegetarian plates in Lebanese cuisine. When people used to make stuffed zucchini, they kept the removed core and found a way to cook it and make it delicious.

There are various recipes for the zucchini innards, the one I made today among them. This is a favorite of mine and I’m sure it will be one of yours when you try it 🙂

Ingredients:

  • The inner part of the zucchini (about one cup and a half)
  • 1 medium onion
  • 3 cloves of garlic
  • 1 tablespoon olive oil
  • 1 tablespoon grenadine molasses
  • 1 teaspoon of dried mint

Preparation:

  • Chop the onion and the cloves of garlic finely
  • In a small saucepan, heat the oil and fry the onion with garlic until slightly golden
  • Add the zucchini and fry with the onion and garlic for 2 minutes
  • Cover the casserole and on a very low heat cook for about 5 minutes
  • Add now the grenadine molasses and stir well for few seconds
  • Put the fire off and sprinkle the dried mint
  • Put it on a plate, serve with bread (Lebanese pita is recommended) and enjoy

Mashed Potato Baked with Chicory

This is another recipe that is Lent-friendly, as it contains chicory and no meats or fats. I got this recipe from a friend who grew up in a distant village in mountains of South Lebanon. During the 40-day fast, her mother would like to get creative and try to make something new in her cuisine to make the fast more playful. I took the recipe from her and tried it, and it turned out to be delicious!

Ingredients:

  • 1 kg potatoes
  • 1/2 kg chicory
  • 2 onions chopped into long strips
  • 1 teaspoon sumac
  • salt, seven spices
  • 2 tablespoons olive oil, 1 tablespoon cooking oil

Preparation:

  • Boil the potatoes in salted water, when they’re cooked mash them properly
  • Boil the chicory in another pot with salted water, drain them after
  • heat the olive oil and fry the strips of onion, then add the boiled chicory and season with salt, seven spices and sumac
  • preheat the oven to 200C
  • Grease an oven tray with cooking oil and place one layer of mashed potatoes
  • Cover the potatoes with the chicory/onion mixture
  • Place the remaining mashed potatoes over the chicory to cover it all
  • Sprinkle a bit of olive oil on the top, and place the tray in the oven for about 30 minutes, until the top becomes slightly golden

Note: this dish is usually served warm, but I secretly enjoy it cold as leftovers at night. Try it and let me know if you do too 🙂

Hindba in Oil (Chicory in Oil)

In this time of the year, chicory (or hindba as it’s known in Arabic)  is always available in Lebanon. Chicory is well known for the wealth of minerals and nutrients that it contains, just like spinach. Today I prepared it in the old-fashioned Lebanese way. It is very popular during lent because it is cooked without any meat or fat. I hope you will like it.

Ingredients:

  • 1 kilo of chicory
  • 1 onion finely diced
  • 3 garlic clove crushed
  • juice of 1 lemon
  • salt, seven spices
  • 2 tablespoon olive oil
  • 2 large onions chopped into long strips
  • frying oil

Preparation:

  • Cut the chicory in small pieces and wash thoroughly
  • Boil in salted water until the chicory is nearly, but not fully, cooked. It should feel softer than before, but not limp. Drain the water
  • Heat the olive oil and fry the finely diced onion until softened then add the crushed garlic
  • Place the chicory over the onion, mix all the ingredients and season with salt and seven spices
  • Put the fire on its lowest setting, cover the pot and let it boil gently until the chicory is fully cooked. Now it should feel super soft
  • Add lemon juice
  • Place the chicory in a serving plate
  • Fry the long onion strips until brown and put it on the top of chicory plate for decoration and taste

Lebanese Omelette

Today, I did not have enough time to make a lunch that takes a lot of preparation. So I decided to make spinach and rice (my son loves it, tune in for the recipe tomorrow!) and lebanese omelette.  My grand mother told me that during the second World War, people in Lebanon suffered from starvation, especially in the mountains because it was difficult to get many ingredients they needed for cooking. Since most people in the countryside had their own farm, this recipe came to be a main dish at that time.

Today, I like to make the omelette as a side dish with a green salad accompanying it.

It is simple and easy….. And delicious, of course.

Ingredients:

  • 3 eggs
  • 1/2 cup of chopped parsley
  • 1 medium onion chopped finely
  • 3 tablespoons of all purpose flour
  • 1/2 cup of water
  • salt, pepper and a pinch of ground cinnamon

Preparation:

  • Mix all the ingredients together very well in a bowl until it becomes like pancake batter, then put the bowl in the fridge for about one hour
  • Afterwards, heat about one liter of cooking oil in a large frying pan
  • Drop about a half cup of batter into the cooking oil fry on both sides until golden brown
  • When done, remove them onto a plate with a large paper napkin to absorb the excess oil

Tuna salad with pasta

I consider salad a free dish. I mean, you can put all kinds of vegetables you like, you can add some fruits to have an exotic salad and you can even put any kind of meat, poultry or fish and have a complete meal. As for the dressing, use your imagination and your “taste” to create all kinds of dressings..

Today I made tuna salad with pasta, which reminds me of the good old times when me and my friends used to play scrabble at night; we would decide to make a salad instead of having a heavy dinner while taking a break from the game. This way, its easier to prepare for the host, and less calories for us at dinner time.

This tuna salad is one of my favourites, because you can prepare it within 20 minutes maximum.

Try it, you will see…

Ingredients:

  • 250 gs of pasta
  • one tomato
  • one green pepper
  • one red capsicum
  • lettuce ( any kind you like )
  • one can of sweet corn
  • one can of tuna

For the dressing:

  • juice of one lemon
  • one tablespoon of mayonnaise
  • salt, pepper
  • a pinch of black pepper
  • olive oil

Preparation:

  • Fill a pot with water, put a tablespoon of salt, and 2 tablespoons of cooking oil and bring the water to boil
  • Add the pasta and respect the cooking time you find on the box
  • In the meantime, wash the vegetables and cut them into very small pieces
  • When the pasta is cooked, drain it from the water, put it in a serving bowl, add the vegetables, and the tuna
  • Mix the ingredients of the dressing together very well and pour it over the salad

  • • ضلوع السلق المتبقية من وصفة العدس بالحامض
  • • فصان من الثوم
  • • طحينة, عصير ليمونة حامضة

طريقة التحضير:

  • • تنقى الضلوع من جميع الاوراق الخضراء المتبقية من السلق وتغسل وتقطع قطعا كبيرة وتوضع في طنجرة وتغمر بالماء مع قليل من الملح
  • • حين تنضج توضع في مصفاة الى أن تجف تقريبا
  • • يدق الثوم مع الملح ويوضع فوقه الحامض ويحرك جيدا
  • • تدق الضلوع قليلا ويضاف اليها الطحينة ثم الثوم المدقوق مع الحامض وتحرك بالملعقة الى أن يصبح المزيج متجانسا
  • • تصب في صحن التقديم ويوضع فوقها زيت زيتون
  • • وألف صحتين
