Chicken Stew With Olives

From time to time, I like to try new recipes, especially when I want to make chicken. A friend of mine who lives in a village, invited me once for lunch. And among the food she prepared, she made this chicken stew with olives as a main dish which we enjoyed a lot. I took the recipe and tried it at home. It was so good and so I decided to share the recipe with you today.

Ingredients:

  • 1 whole chicken for about 1.5 kilo
  • 1 bunch fresh coriander, finely chopped
  • 1 bunch fresh parsley, finely chopped
  • 3 or 4 cloves garlic, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon saffron
  • 1 teaspoon turmeric
  • 1 tablespoon dried basil
  • juice of one lemon
  • 1 tablespoon olive oil
  • about 10 baby onions
  • 1 cup black olives, seed removed and sliced

Preparation:

  • Mix the coriander, parsley, garlic, salt, pepper, saffron, turmeric, basil, lemon and marinate the chicken with this mixture for around 10 minutes
  • Heat the oil in a pot and fry the chicken from all sides until it becomes golden
  • Add the onion and the olives, cover the chicken with about 4 cups of water and let it cook on a medium heat, when the water starts boiling, reduce the fire, cover the pot and let it cook until the chicken softens (to save time you can use a pressure cooker)
  • When cooked, place the chicken in a plate with all the vegetables with olives around
  • You can drain the remaining water and use it to cook rice with this stock, the rice will be flavorful

Kabsse ( Chicken With Rice – Arabian Gulf Way)

After living in Abu Dhabi in the United Arab Emirates for more then twenty years, I learned a lot about their culture and some of their cuisine. Their food is somehow similar to our Lebanese food, but they use more spices. Kabsse is a very popular dish in Abu Dhabi, and it can be cooked with chicken, meat or even fish. Today I prepared chicken with rice the Arabian Gulf way “Kabsse”.

Ingredients:

  • 1 whole chicken
  • 3 large onions, cut in wing shape + one small onion peeled
  • 5  cloves
  • 3 cloves of garlic, chopped
  • 2 large tablespoon tomato puree
  • 1/4 cup lemon juice
  • 1/2 cup olive oil
  • spices: cumin, dried coriander, black pepper, salt, ground cinnamon, lime salt
  • cinnamon stick
  • 3 cups basmati rice ( long grain from pakistan)
  • 4 bay leaves
  • 4 whole cardamon
  • 2 tablespoons oil
  • 1 medium onion chopped roughly
  • 4 or 5 celery stick, cut into small cubes
  • 2 red tomatoes, chopped
  • 3 cups chicken stock
  • pine seeds, handful
  • peeled almonds, handful
  • cashews, handful
  • 1 tablespoon butter
  • 1 tablespoon corn oil

Preparation:

  • Wash the chicken and cut into 8 pieces
  • Mix 1 tablespoon of each: salt, cumin, dried coriander, black pepper, ground cinnamon, lime salt and place in a small jar
  • Put the chicken pieces in a bowl and rub with one tablespoon of the spices mixture, soak with the 1/4 cup lemon juice and the half cup of olive oil. Soak overnight
  • Next day, in a large pot heat the 2 tablespoons of oil and fry the wings of onion until light brown, remove half of the fried onions and put aside ( you will use it later for the decoration)
  • Fry the chicken pieces over the remaining onions in the pot, until brown
  • Put the 5 cloves on the small peeled onion and place it over the fried chicken with the cinnamon stick, 2 bay leaves, 2 cardamons
  • Put over the chicken 1 tablespoon of tomato puree, cover the pot and let it cook on a very low fire for about 5 minutes
  • Put the rice over the chicken, cover with about 5 cups of water ( or chicken stock if you prefer), when it start boiling place the pot on a very low heat, cover it and let it cook gently until the rice absorbs all the water
  • In the mean time prepare the sauce : in a small pot, heat the remaining oil, fry the onion, the chopped garlic and the celery sticks  and the tomatoes, add the remaining tablespoon of tomato puree, cover with 3 cups of chicken stock and let it boil gently
  • Add one tablespoon of the spices mixture, one cinnamon stick, 2 cardamon, 2 bay leaves
  • When the vegetables are well cooked remove the cinnamon stick, the bay leaves and cardamon, puree the vegetables with a hand mixer

  • In a small saucepan heat the butter with the oil and fry the pine seeds, almonds and cashew
  • Place the chicken with rice on a serving plate place fried onions on the top and decorate with the pine seeds, almonds and cashew, and few leaves of celery
  • Serve the sauce with the rice and enjoy.

Spaghetti Gratin With Chicken

While I was thinking about Tabkhet el Yom ( what to cook for lunch today), I checked my fridge and I found boiled chicken and chicken stock. And checked the pantry and found spaghetti. And, always there is cooking cheese and tomato in my fridge. Because, I like from time to time try something new, I decided to cook them together in Lasagna way, but by using the cooked chicken instead of minced beef. And the result was really amazing. The recipe turned out Delicious.

Ingredients:

  • 1 packet of 500 grams spaghetti
  • 1 tablespoon salt, 1 tablespoon corn oil ( to be added to the water for boiling spahetti)
  • about 2 cups of shredded boiled chicken, skin and bones removed
  • 1 medium onion, finely chopped
  • 2 red tomatoes, finely diced
  • 1 teaspoon salt
  • 1 tablespoon ketchup
  • 1 teaspoon thyme
  • 1 tablespoon mixed herbs
  • 1 tablespoon canola oil
  • 1 liter chicken stock
  • 3 tablespoons flour
  • 1/2 cup powder milk
  • 1 cup and a half shredded cheese ( I mixed parmesan and gruyere)

Preparation:

  • In a large pot, boil water, add the tablespoon of salt with the tablespoon of oil, boil the spaghetti for 2 minutes less than instructed, drain the spaghetti and wash is with cold water
  • I another pot, heat the oil, fry the onions until light golden, then add the chopped tomatoes, and cook with lid on for about 10 minutes
  • Add the shredded chicken to the tomatoes and onions, season with salt, thyme and mixed herbs and the ketchup, cook for another 10 minutes
  • Preheat the oven to 200 C
  • In another pot, boil the chicken stock with the milk powder
  • Dissolve the flour with 1/2 cup of water and add it to the stock, let it boil stirring constantly, reduce the fire and let it cook until it starts thickening, then remove from fire
  • In a tray, place 2 tablespoons from the chicken stock sauce, one layer of spaghetti, half the chicken sauce and cover it with half of the white sauce
  • Repeat the same procedure another time, then top with the shredded cheese and bake for about 30 minutes, until the top becomes golden color
  • Serve it with salad

Shish Tawook (Grilled Chicken)

“Shish” means skewer in Turkish and it has been incorporated in the Lebanese language. “Tawook” means chicken and other types of poultry in Turkish, and it has also been integrated in the Lebanese language. It can be found in take away shops as a sandwich, along with french fries, pickles and garlic dip (chicken’s best friend). Or, in a platter in the restaurants. It can be bought raw and ready to go to the oven in all the supermarkets and butcheries, and in a wide variety of flavors: tomato, mayonnaise, garlic…etc. But usually I like to make my own mixture to soak the chicken.

Ingredients:

  • 500 grams chicken fillet
  • 1 onion, finely chopped
  • 4 tablespoons plain yogurt
  • 1 tablespoon tomato paste
  • 1 teaspoon chili paste
  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried coriander
  • 1/2 teaspoon clove
  • 1/2 teaspoon cardamon
  • 1/2 teaspoon cinnamon
  • dash of black pepper
  • 1 teaspoon garlic powder
  • 1 small can of mushrooms

Preparation:

  • Cut the chicken into 2 inches square
  • Mix all the remaining ingredients and place the chicken pieces in the marinade with the mushroom and keep in the fridge for about 2 hours
  • Preheat the oven to 180 C
  • Place the chicken pieces with mushroom on a wooden skewers and bake for about 25 minutes turning them once after half the cooking time
  • Enjoy eating with garlic dip and cucumber pickles

Mixed Vegetables with Boiled Chicken

Today is a very special day for me. My son who is living in the United States came yesterday evening for a 10 day vacation in Lebanon. He came with his friend who loves chicken and vegetables, and since they decided at the last minute – as usual – to eat at home instead of going to a restaurant I was pressed to make something  quick, healthy and yummy at the same time for them. Luckily I had plenty of vegetables in my fridge, and boiled chicken in the freezer, so I whipped up this dish and it turned out to be a delicious meal and they enjoyed it. I hope you will too!

Ingredients:

  • 500 grams boiled chicken, skin and bones removed
  • 3 carrots, sliced
  • 1 onion, cut into wings
  • 2 cloves of garlic, crushed
  • 1 cup of green beans
  • 1/2 cup peas
  • 3 zucchini, sliced
  • 2 red tomatoes, finely diced
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon seven spices
  • 1 tablespoon and a half oregano
  • 2 tablespoons of butter
  • a handful of halved almonds

Preparation:

  • Heat the oil in a pot, fry the onion and garlic for about 3 minutes, add the sliced carrots, cook for three minutes more until nearly tender
  • Add the green beans, cover the pot and let it cook for about 5 minute on low fire
  • Put the tomatoes and the peas, add the salt, pepper and oregano, cover the pot again and let it simmer for about 5 minutes
  • Cover it with 1 cup of water, add the zucchini and let it cook on a very low flame, until the vegetables are soft and the water evaporates
  • In another pot, heat 1 tablespoon of butter and gently heat the boiled chicken until the pieces of chicken start coloring
  • In a saucepan heat the remaining tablespoon of butter and fry the almonds until nice golden color
  • For serving, place the vegetables in a plate, then put the chicken pieces, on the top place the fried almonds, and enjoy eating

Rice and Chicken (Lebanese Way)

Arabs love this dish! If you have an Arab friend, make this dish when you invite them over; it will guarantee to make them smile 🙂 Every Arab country has their own variation of it and is generally cooked during special occasions. The combination of the rice cooked with chicken stock and the fried nuts spread on the top of the plate gives it a special flavor and texture in your mouth. Some people like it covered in gravy but personally, I like it with yogurt. Try it both ways, tell me which way you prefer 🙂

Ingredients: for boiling the chicken

  • 1 whole chicken (about 1 kilo)
  • 1 tablespoon salt
  • 1 cinnamon stick
  • 1 teaspoon seven spices
  • 1/2 teaspoon clove
  • few bay leaves
  • 1/2teaspoon whole cardamon
For cooking the rice:
  • 200 grams minced meat
  • 2 cups long grain rice
  • 1/2 teaspoon seven spices
  • 4 cups chicken stock
  • 1 tablespoon corn oil

For the decoration:

  • 1 tablespoon butter
  • handful of each: halved almonds, pine seeds, pistachios, cashew
  • a pinch of ground cinnamon

Preparation:

  • Place the chicken in a large pot, cover with about 2 liters of water, place on fire and let it boil.
  • Skim the white foam. Then put the salt, cinnamon stick, clove, cardamon and seven spices and let it boil until tender (in pressure cooker it will take 15 minutes)
  • When boiled, drain the chicken from water (but keep the stock) and tear the chicken meat from the bones and keep aside
  • In another pot, heat the oil and fry the minced meat until brown, season with salt and seven spices
  • Add the rice and cover with 4 cups of chicken stock, cover the pot and let it simmer on a low fire until the rice is cooked
  • In a saucepan heat the butter and fry the nuts until nice golden, stirring constantly to prevent them from burning then place on a kitchen towel
  • To serve place the rice in a large plate, put the chicken pieces on the top, sprinkle with cinnamon then cover with the fried nuts
  • Enjoy eating with a side salad (and yogurt or gravy, whatever you prefer)

Freekeh With Chicken And Meat

Freekeh is green wheat, roasted, smoked and dried. It is a very nutritious grain which contains a large amount of protein, vitamins and minerals. The use of this green wheat goes for back more than 2000 years ago. It can be used as a side dish like rice or couscous, and can even be mixed with some vegetables in a salad. The recipe I will be showing you uses the green wheat as a main dish. The recipe is from the south of Lebanon, and I learned it from my mother in law. The south of Lebanon is well known for the plantation of the wheat like the Bekaa area in the East of Lebanon. This grain can be found in Gourmet shops or in big supermarkets in foreign countries.

Ingredients:

  • 1 chicken
  • 200 grams beef cubes
  • 3 cups freekeh washed and drained
  • 1 teaspoon salt
  • 1/2 teaspoon sweet pepper
  • 1/2 teaspoon cinnamon
  • 1 tablespoon corn oil + another tablespoon of corn oil
  • handful of pine seeds, handful of almonds

Preparation:

  • Fry the beef cubes with oil until brown then cover with water and cook until tender
  • In another pot, boil the chicken then remove the skin and bones and keep the water to cook the freekeh with
  • Heat the oil in a third pot, add the freekeh, season with salt, cinnamon, sweet pepper and cover with 6 cups of chicken stock
  • Cover the pot and let it cook on a very low flame. When the water evaporates, if the freekeh is not tender then add more chicken stock and let it continue to cook
  • Add the meat to the pot and mix it with the freekeh
  • Roast the almonds and pine seeds
  • Serve by placing the freekeh with pieces of the boiled chicken and garnish with the pine seeds and almonds over
  • Decorate with few leaves of parsley (optional) and enjoy your meal with yogurt or a salad

Chicken With Spinach

I enjoy getting playful when cooking, more and more since I started this blog. I watch a lot of food shows on television and I  also read cooking magazines, so I’m always trying new recipes while adding a touch of me, mixing and matching with other recipes to make something that suits my taste. I won’t pretend to have created this meal, but I think that everyone makes food in their own way and this way is mine 🙂

Ingredients:

  • 500 grams chicken fillet
  • 3 tablespoons corn oil
  • 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1 cinnamon stick
  • 500 grams fresh spinach, chopped
  • 1 can of sliced mushrooms, washed and drained
  • 3 large green onions slices
  • 1 tablespoon butter

For the sauce:

  • 3 tablespoons butter
  • 3 tablespoons flour
  • 3 cups milk
  • 1 handful finely chopped fresh spinach
  • 1 teaspoon salt
  • 1 dash of freshly ground nutmeg

Preparation:

  • Rub the chicken fillet with salt and black pepper
  • Heat the oil in a saucepan and fry the chicken until brown, cover with one cup of water and add the cinnamon stick; let it cook until tender
  • In another saucepan, melt the butter, fry the green onion for about 4 minutes then add the mushrooms and the spinach with a dash of salt; cover the saucepan and let it simmer on a very low flame for about 10 minutes
  • Prepare the sauce:  melt the butter in a small pot and add the flour, mixing it well
  • Gradually add the milk, whisking constantly until it becomes thick and add salt, nutmeg and finally the finely chopped spinach

  • Serve together in a plate. You can add rice or pasta if you wish, remember to make it your way too 🙂

Fettuccine with Spinach and Chicken

Pasta, spinach and chicken are three ingredients that most of people like. So when I wanted to make something healthy, nutritious and full of vitamins I would cook this gratin and my children always loved it. It is inspired from the Italian cuisine that we love. And, feeling nostalgic for when my children were young, and how I made them eat it telling them a lot of fairy tales and stories, they asked me to cook it for their children to see how they would like it. And believe me, THEY JUST LOVED IT…

Ingredients:

  • 300 grams fettuccine
  • 750 grams fresh spinach, chopped
  • 1 medium onion, finely chopped
  • 250 grams fresh mushroom, sliced
  • 50 grams butter
  • 1 chicken breast boiled
  • 1 tablespoon olive oil
  • 1 tablespoon vegetable oil
  • 1 1/4 cup chicken stock
  • 1 1/4 cup cooking fresh cream
  • 1 cup shredded mozzarella cheese ( or any other kind of cheese you like)
  • 1 teaspoon salt
  • 1/2 teaspoon seven spices

Preparation:

  • Boil the fettuccine pasta with one tablespoon vegetable oil, drain and pour cold water over it
  • Put the butter and olive oil in a saucepan add the onions, the salt and spices, stir for about 5 minutes
  • Add the sliced mushroom, the spinach and the boiled and shredded chicken, cook for another 5 minutes then remove from fire
  • Mix the fresh cream with the chicken stock well then add it to the mixture of spinach and chicken
  • Preheat the oven to 180 degC
  • Put the cooked fettuccine in a baking dish, cover with the cream-spinach mixture and top with the shredded cheese
  • Cook for about 25 minutes or until the color of the cheese turns golden
Makes about 6 servings

Moghrabiyeh

This is a traditional Lebanese dish from our cuisine, one which we like to make in special occasions. The Moghrabiyeh is made of semolina, water and salt. It has a special way of cooking when it is dry. In Lebanon we can find it fresh and the cooking time is less than with the dry version as well as less work. You can find it in Lebanese delicatessen shops. Today I made it for both of my daughters who are coming for lunch as it is a meal you like to share with your loved ones. It’s cooked with both meat and chicken. As for kids we say these are small pasta balls and we can serve it to them with yoghurt. They seem to enjoy it as much as we grown ups do!

Cooking Moghrabiyeh has 3 steps:

-Boiling the chicken

-Preparing the sauce

-Cooking of Moghrabiyeh itself

Ingredients for boiling the chicken:

  • a whole chicken of 1.5 kilograms
  • 1 tablespoon of salt
  • 1 cinnamon stick
  • 3 whole cardamon seeds
  • 1 teaspoon 7 spices
  • 3 cloves
  • 2 bay leaves

Preparation of the chicken:

  • Wash the chicken and place it in the pressure cooker with about 2 liters of water
  • Place all the spices with it cook for about 15 minutes in the pressure cooker until it is tender
  • Drain the chicken, remove the skin and the bones. Keep the chicken stock because you will need it to cook the Moghrabiyeh
Ingredients for the sauce:
  • 400 grams of lamb cubes ( you can use beef as well if you prefer)
  • 2 cups of chick peas, soaked over night
  • 750 grams of baby onion peeled
  • 1 teaspoon salt
  • 1 tablespoon cumin
  • 1 tablespoon caraway
  • 1 teaspoon 7 spices
  • 4 tablespoons of vegetable oil
  • 3 tablespoons of flour

Preparation of the sauce:

  • Heat 2 tablespoons of the oil and fry the meat, add salt and the seven spices , cover with one liter of water and cook until the meat is tender.( In the pressure cooker it will take about 20 minutes)
  • Remove the meat from the water when cooked and keep the meat stock
  • In a pot heat the remaining 2 tablespoons of the oil and fry the baby onion until nice golden color
  • Add the peas, cover with about 2 cups of the meat stock and cook until the peas are tender, this will take about 15 minutes
  • Place the cooked meat back, add the cumin and caraway, cover and put on a low heat
  • Dissolve the flour with a cup of water and add it to the sauce, stirring from time to time and let it simmer until the sauce thickens
  • Adjust the salt as needed

Ingredients for the Moghrabiyeh:

  • 1 kg of dried Moghrabiyeh
  • 100 grams of butter
  • 1 teaspoon of salt
  • 1 tablespoon cumin
  • 1 tablespoon caraway

Preparation of the Moghrabiyeh:

  • Boil about 2 liters of water with a pinch of salt
  • Put the fire off and place the Moghrabiyeh in the hot water for 15 minutes, drain and wash with cold water
  • n a pot melt the butter and place the Moghrabiyeh, add the cumin and caraway and mix well
  • Pour 2 cups of the chicken stock over the Moghrabiyeh, check if it is tender, if not add another cup of the chicken stock at a time until tender

Now you have all the ingredients ready. To serve place the Moghrabiyeh on a plate, cover with the pieces of chicken. Place the sauce in a bowl. Mix to eat, you can have yogurt on the side.
