Endive Salad With Parmesan Cheese And Cheese Dressing

When I used to live in Abu Dhabi, three friends and I would arrange a Scrabble night once a week . We had decided that the host would only make a salad to avoid adding any extra work and also for us to eat less. Since we used to rotate who would host, it quietly became a competition who would make the most delicious salad, each one of us trying to outdo the other. It was a fun time. Tonight, I remembered those days while playing Words With Friends with my daughter and decided to make one of my more flavorful salads made with endives, parmesan cheese and dressing made out of cheese also.

Ingredients:

  • 3 endives
  • 3 cucumbers
  • 2 tomatoes
  • few leaves of iceberg or lettuce
  • 1 grated carrot
  • few leaves of parsley for decoration
  • 100 grams sliced parmesan cheese

For the dressing:

  • 100 grams cream cheese
  • 1/2 cup olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • dash of black pepper

Preparation:

  • Wash all the vegetables, pluck the endives leaves and spread them out in a serving plate
  • In the center place the iceberg leaves
  • Slice the tomatoes an cucumber and put them over the iceberg
  • Top it off with the slices of cheese, the grated carrot and the leaves of parsley
  • Mix well all the dressing ingredients; adjust the seasoning as you like and keep it in a saucer on the side
  • Invite some friends over and play Scrabble 🙂

You can use whatever kind of cheese you like and also you can add any kind of flavor like basil, rosemary, thyme, or anything else. Also, It can be baked in the oven or deep fry. Tell me if you like it 🙂

Man’oushe

The most famous Lebanese breakfast is the Man’oushe and is considered the Lebanese version of pizza. It is made out of dough, traditionally topped with Zaatar mixed with olive oil or with cheese. Zaatar is made out fresh thyme, washed, dried and grounded, then mixed with sumac, sesame and salt. In Beirut, you can find a Man’oushe shop on every street corner. It is the perfect breakfast for anybody who doesn’t have time to prepare a decent meal during a busy day; they can grab a Man’oushe from any bakery nearby.

Ingredients:

  • 3cups flour
  • 2 tablespoons vegetable oil
  • 1 teaspoon instant dried yeast
  • 1 cup water
  • 1 cup of Zaatar mixed with 1/2 cup extra virgin olive oil
  • 1 cup shredded cheese of your choice ( I used Gruyere)

Preparation:

  • To make the dough, mix the flour with salt, oil, dried yeast and water in a bowl until you have a soft dough; let it rest covered with a towel to rise for about 1 hour
  • Preheat the oven to 200C
  • Roll the dough into circles of about 1/4 inch thickness (the size of the circle is totally up to you) and top with Zaatar or cheese; bake for about 15 minutes and serve hot

Try it and tell me which one you prefer, the Zaatar or cheese? Personally I cannot decide which is tastier, they are both tasty 🙂

Fettuccine with Spinach and Chicken

Pasta, spinach and chicken are three ingredients that most of people like. So when I wanted to make something healthy, nutritious and full of vitamins I would cook this gratin and my children always loved it. It is inspired from the Italian cuisine that we love. And, feeling nostalgic for when my children were young, and how I made them eat it telling them a lot of fairy tales and stories, they asked me to cook it for their children to see how they would like it. And believe me, THEY JUST LOVED IT…

Ingredients:

  • 1 cup shredded mozzarella cheese ( or any other kind of cheese you like)
  • 1 teaspoon salt
  • 1/2 teaspoon seven spices

Nouilles

It is so funny how children have specific opinions even from an early regarding food! When I came to Abu Dhabi,  I discovered that my grandson now insists on eating only spaghetti as his main meal. My daughter was very frustrated and came to me for help. I told her that when my children were young I had the same problem, and that I had difficulty to find a food that pleases them all, this is why I had to make more than one dish everyday. I taught her a trick for feeding a picky eater, which is to feed him what he demands, cooked in a nutritious way. We all like the “gratin foods”, and Nouilles is one of our favorite dishes in the family. And, thank God, the children enjoy it too.

Ingredients:

  • 500 grams of Nouilles pasta, fettuccini or tagliatelli kind
  • boiled chicken
  • 6 cups of milk
  • 100 grams butter
  • 5 tablespoon all purpose flour
  • 1 teaspoon salt, 1 teaspoon seven spices
  • pinch of freshly ground nutmeg
  • 1 tablespoon of vegetable oil
  • 1 cup mozzarella grated , 1 cup parmesan grated

Preparation:

  • Boil the Nouilles with one tablespoon of vegetable oil and salted water, and keep it “aldente”, then drain it
  • Prepare the white sauce: in a small pan melt the butter, add the flour and mix properly with the butter until all the flour is well absorbed by the butter, add the milk slowly and whisk constantly until all the milk has been added
  • Boil on a low heat until the mixture start to thickens, but we do not want it very thick, because the pasta needs to absorb the white sauce
  • Season with salt and nutmeg and remove from fire
  • Preheat the oven to 180 C
  • In a tray place half of the pasta
  • Peel the boiled chicken, remove the skin and bones and break into small pieces, rub them with salt and spices
  • Place a layer of the chicken over the pasta, pour half of the white sauce
  • Cover with another layer of pasta and the remaining white sauce, top with the grated cheeses
  • Bake in the oven for about 30 minutes until the top turns a nice golden color, serve with salad of your choice

ET VOILA..C’EST TOUT:) And HAPPY PALM SUNDAY EVERYONE..

Homemade Pizza

What tastes better than pizza? A HOMEMADE PIZZA, of course. I always prepare the entire pizzas at home, from the dough to the ingredients and the filling to the way me and my children like it. In Lebanon, we have Lebanese pizza called “Man’oushe” which is made out of dough, same as pizza, but filled with either cheese or dried thyme mixed with some olive oil and it’s cooked in a large oven.

My 7 year-old grandson won’t eat any pizza except the one I made because “it is the best pizza ever!” You cant argue with that 🙂

Today I prepared the dough in the morning and let it rest for few hours to let it rise, and then I rolled it and filled it and cooked it; here’s how:

Ingredients for the dough:

  • 5 cups of flour
  • pinch of salt
  • 1/2 cup of corn oil
  • 1 tbsp of instant dried yeast
  • water

Preparation:

  • Put the flour, the salt and the oil in food processor and mix them for a few minutes
  • Then add the yeast and pour the water from the top slowly until all the ingredients form a soft dough
  • Rub a bowl with 1 spoon of oil and place the dough inside it and cover it with a towel
  • Let it rest and wait until it doubles in volume

In the meantime prepare the filling.

Ingredients for the filling:

  • 1 large onion, chopped finely
  • 3 red tomatoes cut in small dices
  • 1 small can of cut mushroom
  • 1/2 cup of black seedless and shredded olives
  • 1 tablespoon thyme, 1 tablespoon oregano
  • 1 tbsp of tomato paste
  • 1 cup grated mozzarella cheese
  • 1 cup grated emmenthal cheese
  • 1 tbsp of corn oil

Preparation:

  • In a pan heat the oil and fry the onions
  • Add the cut tomatoes to the onions and let it cook gently, then add the mushrooms
  • Now you can sprinkle the thyme and oregano
  • Add now the black olives and the tomato paste,  cover the pan and let it cook gently on a low heat
  • Preheat the oven on 180c
  • When the dough is ready and with a rolling pin, roll the dough and put it in a pizza tray
  • Sprinkle some thyme over the dough and put the filling on top
  • Cover with the two kinds of cheese and bake for about 25 minutes

AND THAT’S IT…. ENJOY:)

On this occasion I would like to wish all Christians a blessed Ash Monday! Ash Monday, or the first day of Christian lent, marks the beginning of forty days of fasting where Christians should avoid meat, chicken and even fish and they should eat only vegetables and fruits. Tomorrow I will post something related to lent and an applicable dish for the occasion.

Today however, the dish I made is taken from French Cuisine, and is made from cauliflower, white sauce and cheese. While it contains no meats, the milk and cheese may be unsuitable for those strictly following lent.

Preparation:

  • Wash the cauliflower and cut it, boil to half cooked in a casserole with salted water, then drain the cauliflower

  • Preheat the oven to 180C
  • In an oven tray put the cauliflower and cover it with the white sauce and then on top of it put the cheese
