It’s been a long time since I posted last as this was a busy summer for me; my two daughters came with their families to spend their vacation in Lebanon. My son was so jealous he also visited from New York to join the fun. We all had a lovely time together but now I’m back to the recipes you love and I miss posting about 🙂

Here I am back to my kitchen with a ton of new recipes that I would love to share with you.

Tamrye is a kind of sweet is found mainly during the Holy Month of Ramadan, as well as during special occasions such as St. Marie day, St. Charbel’s and others – we have several saints in Lebanon.

“Tamr” in Arabic originally means date, but this recipe has nothing to do with dates. It’s made of a dough filled with a mixture of semolina and milk with sugar, fried and dusted with icing sugar.

Ingredients for the dough:

  • 2 and a half cups of flour
  • 1 cup water
  • pinch of salt
  • 1/4 cup oil

Ingredients for the filling:

  • 1 cup semolina
  • 5 cups milk
  • 2/3 cup sugar
  • 1 tablespoon flower blossom water
  • about 2 cups frying oil
  • icing sugar for dusting

Preparation:

  • Sift the flour with salt, add water and mix until you have a soft dough
  • Cut the dough into small pieces, put them in a oiled tray, and pour some oil over the dough, cover the tray and let it rest for about 2 hours

  • In the meantime prepare the filling: In a pot, place the semolina with sugar and milk, put on fire and let it boil stirring consantly
  • After boiling add the flower blossom water and place the filling on a tray and let it cool

  • Take a piece of the dough and roll it very thinly, brush oil over it and cut into square, place a tablespoon of he filling in the center of the dough, fold the four corners overlapping them

  • When you finish filling all the dough, heat the oil and fry them until golden brown, dust them with icing sugar and enjoy eating while still hot

All Chocolate Cake

I love chocolate, I think you should know that already. I especially love chocolate cakes, and I have many different recipes to make this lovely dessert. I like to mix and match sponge cake recipes with different flavors or glazes that I find from another recipe. My son has been craving chocolate cake since I asked him if I should make some about 2 weeks ago and made pineapple cake instead. I couldn’t torment him any longer, so I finally made this delicious chocolate cake covered in chocolate glaze and chocolate chips. This is the perfect treat for anyone who needs their chocolate fix 😉

Ingredients for the cake:

  • 125 grams cooking chocolate cut into small pieces
  • 3 eggs, separated
  • 3/4 cup of flour less 1 tablespoon
  • 1 cup icing sugar less 1 tablespoon
  • a pinch of salt
  • 125 grams soft butter+ 1 tablespoon to grease a round cake tin

Ingredients for the chocolate glaze:

  • 1 cup fresh cream
  • 2 tablespoons corn syrup
  • 2 tablespoons sugar
  • 340 chocolate chips
  • 1 teaspoon vanilla

Preparation:

  • Preheat the oven to 180 C
  • Put the pieces of chocolate in a double boiler (or bain-marie) to let it melt
  • Remove from fire then add the flour, sugar and the egg yolks; mix well
  • Whisk the egg white with a pinch of salt until it forms a peak
  • Gently fold the egg whites into the chocolate mixture
  • Put into the greased tin and bake for about 30 minutes, then put it on a wire rack until cold
  • To make the chocolate glaze, boil the fresh cream in a casserole with sugar and corn syrup, then remove from fire
  • Pour the boiled cream over the chocolate chips in a bowl and stir with a spoon until the chocolate melts, then let it set to cool. When cool add the vanilla
  • Spread the chocolate glaze over the cake and decorate with whatever you like (I used kiwi and chocolate chips; you could use any fruits, sprinkles, whipped cream, etc…)

Upside Down Pineapple Cake

This is a suitable cake for Spring. The pineapple used gives it a very refreshing taste, like a cool breeze! The pineapple juice also moistens the cake itself, giving it a more moist texture in the mouth. Nothing more to say about this cake, except that the decoration with strawberry adds a nice touch 🙂

Ingredients:

  • 5 eggs
  • 1 can of sliced pineapple (drained and juice kept)
  • 2 cups of sugar
  • 3 cups of flour + extra 1 tablespoon to dust the mold)
  • 1 cup pineapple juice
  • 1 teaspoon vanilla essence
  • 3 teaspoons baking powder
  • 1/2 cup butter at room temperature + extra tablespoon to grease the mold)
  • 1/4 cup of honey ( or golden syrup)

Preparation:

  • Preheat the oven to 180C
  • Grease a 26 cm diameter round and deep tray, dust with flour, pour the honey then place the pineapples slices over
  • With an electric mixer, mix the eggs with vanilla until pale then add sugar and keep mixing until the sugar dissolves
  • Alternate adding flour with pineapple juice, mixing slowly,then add the baking powder; keep mixing for a few minutes
  • Place the mixture in the tray and bake in the oven for about 40 to 45 minutes or until a skewer inserted comes out clean
  • Leave the cake in the tray for few minutes then turn it onto a wire rack to cool
  • Enjoy eating with fresh strawberry for decoration

Profiteroles And Eclairs

It is Saturday and the weekend has begun! I like to have some home made desserts for the weekend. Today I decided to make both Profiteroles and Eclairs since they are made from the same dough and filled with the same creme patissiere; the only difference between them is their shape.

Making this recipe requires two kinds of ingredients:  one for the dough and the other for the creme patissiere (filling).

Ingredients for the dough:

  • 100 grams of unsalted butter
  • 1 cup of water
  • a pinch of salt
  • 1 cup of all purpose flour
  • 4 eggs

Preparation of the dough:

  • In a small pot boil the water with butter and a pinch of salt
  • Add all the flour at once and mix vigorously until you have a consistent dough
  • Remove from fire and let it cool for 5 minutes, then add one egg at a time, mixing well in an electric mixer until well blended in the dough (you can use a wooden spoon to mix the eggs if you like, but it will take more effort)
  • When you finish mixing all the eggs in the dough, leave it to cool
  • Preheat the oven to 180 C
  • Grease a tray with a bit of butter, place the dough in a piping bag and using a large nozzle make circle shape to make the profiteroles, and long ones to make the eclairs
  • Bake for about 25 minutes, or until the top of the dough becomes light golden color

Ingredients for the creme patissiere:

  • 1/2 cup powder milk
  • 1 1/2 cup water
  • 1 egg
  • 3/4 cup sugar
  • 1/4 cup flour
  • 1 teaspoon vanilla

Preparation of the creme:

  • Boil the milk in a casserole and add the vanilla
  • In a bowl mix the sugar with flour and egg
  • Pour the mixture of egg, sugar and the flour slowly to the milk whisking constantly until thickening, then allow to cool. It is better to cover the creme with a cling film to prevent forming hard layer on the top when cooling

Filling the dough with creme:

  • Make a small hole in the profiterole ( the round shape) using a wooden stick
  • Place the cream in a piping bag and using a fine nozzle fill the dough.
  • For the eclairs (the long shaped ones) make a small cut on the side of the dough and with a small spoon spread the cream into it
  • For the final touch you can either sprinkle the sweets with icing sugar or make chocolate icing.

Chocolate icing:

  • Boil 3/4 cup of fresh milk with 1 teaspoon icing sugar and 1/2 teaspoon butter
  • Cut 50 grams of dark chocolate into small pieces and place it in a bowl
  • Pour the boiling cream over the chocolate and mix well until the chocolate dissolves

With a small teaspoon put the icing chocolate on the top of eclair and place on a grill to cool completely.

N.B : If you want to fill it with chocolate cream instead, replace 1 tablespoon of flour with 1 tablespoon of cocoa in the ingredients.

Vegetable Spring Rolls

If you like Spring Rolls like me, and have been looking for an alternative way to having them other than deep fried without compromising the taste….then this is the post for you!

Ingredients:

  • 1 packet spring rolls wrapper ( about 450 grams)
  • 500 grams shredded cabbage
  • 400 grams bean sprout
  • 2 carrots shredded
  • 1 onion thinly sliced
  • 5 cloves crushed garlic
  • 2 tablespoon soy sauce
  • 1 teaspoon salt
  • dash of sweet pepper
  • 1 tablespoon vegetable oil

Preparation:

  • Heat the oil and fry the onion with garlic until golden, add the carrots and leave it for about 10 minutes, then add the cabbage and bean sprouts, season with salt pepper and soy sauce
  • Drain these vegetables in a colander over a bowl and leave it until completely cold, keep the liquid because we will use it to make to sauce
  • Place one spring roll wrap and put in the center 1 tablespoon of the vegetable filling ten roll it
  • These spring rolls can be eaten raw with the sauce

For the sauce:

  • Take the liquid from the drained vegetables, add 1 tablespoon sugar, 1 tablespoon corn flour, mix it well then bring to boil
  • When it starts boiling add to the sauce one clove of garlic crushed, and 1 tablespoon crushed peanuts
  • And if you like you can have them deep fried as well, with the sauce you like

Sweet And Sour Fish

Today, my 2 daughters and I went to this lovely “Cafe” in down town Abu Dhabi and shared one of those delicious breakfast they serve, and of course we chose the Lebanese one. It had Labneh, Halloumi cheese, Halawe, Black olives, as well as Man’oushe ( we decided to have it with Kashkawal cheese instead of Za’atar). And we had scrambled eggs as a side order, as well as butter and jam.

So, after this breakfast we decided to have for lunch (for dinner I mean), a light chinese meal. This is why I made the Sweet and Sour Fish.

It will take three steps for cooking: the fish, the vegetables and the sauce:

Ingredients for the fish:

  • 500 grams fish fillet of your choice, cut into bite size
  • 1/2 can beer
  • 1 egg, 1 egg white
  • 4 tablespoon flour
  • 1 tablespoon soy sauce
  • salt and pepper
  • oil for deep frying
Preparation of the fish:
  • Mix the beer with 2 tablespoons  flour and the whole egg and some salt and pepper and marinate the fish for 20 minutes
  • After the 20 minutes drain the fish
  • Mix the egg white with soy sauce and the remaining flour, dip the fish into this mixture and deep fry until it’s a nice golden color and put aside

Ingredients for the vegetables mixture:

  • 1 can pineapple chunk (360 grams)
  • 1 medium onion
  • 1 green pepper, 1 red capsicum
  • 1 tablespoon of vegetable oil

Preparation of the vegetables:

  • Cut the onion and the green and red pepper into quarters
  • Drain the pineapple, and keep the juice for the sauce
  • Heat the oil and fry the onion and the vegetables for about 5 minutes and remove from the pan and keep aside

Ingredients for the sauce:

  • 1 cup of fish stock
  • the juice of the pineapple can
  • 3 tablespoons soy sauce
  • 4 tablespoons white vinegar
  • 3 tablespoons brown sugar
  • 6 tablespoons ketchup
  • 2 tablespoons flour
  • salt and pepper to taste

Preparation of the sauce:

  • Using the same pan you cooked the vegetables in, mix all the sauce ingredients together except the flour and keep on a medium-high neat until it boils
  • Dissolve the flour in 1/2 cup of cold water and add to the mixture, stirring constantly until it thickens

Add the fish and the vegetables to the sauce and simmer for about 5 minutes on very low heat. Serve with noodles or rice.

Fondant Au Chocolat

Have you ever tried a Fondant Au Chocolat in a nice restaurant or coffee shop with a scoop of ice cream? The hot chocolate melting in your mouth, contrasting the cold of the ice cream and wished you can eat it any time you want at home? I did. I love the texture of this creamy chocolate and cannot stop myself from eating it even after a heavy dinner. I’ve tried so many recipes to find the perfect one that can satisfy my craving, until a few years back, I found a nice one in an old french magazine and I’ve tried it and I said “that’s the one I am looking for”!! It was perfectly delicious. My children also love it. I made it again today to share this lovely recipe with you. By the way you should be very careful about the cooking time, if you leave it one minute extra in the oven, you will not have the melting chocolate oozing out from inside the cake.

Ingredients:

  • 1/2 cup of flour minus 1 tablespoon
  • 2 eggs+2 egg yolks
  • 1 cup of icing sugar minus 1 tablespoon
  • 100 grams butter
  • 100 black chocolate
  • pinch of salt

Preparation:

  • Preheat the oven to 210C
  • In a saucepanPlace the chocolate with the butter and the pinch of salt and let it melt on water bath for 5 minutes stirring continuously
  • In a bowl whisk the eggs with egg yolks until pale yellow
  • Add the flour to the eggs and mix well
  • Add the icing sugar now
  • Pour the mixture of chocolate-butter over the eggs and flour
  • Grease 6 small molds ( the cup cake ones will be perfect) and divide the mixture into them
  • Bake in the oven for 9 minutes,( you now it is done when the top of the cake is  not soft anymore
  • Eat while it is still warm. Or you can reheat them on the microwave for few seconds only

Coconut Balls

My sister in-law invited me to an afternoon gathering with her friends yesterday, and she asked me to make cheesecake to bring over with me. Knowing how much she enjoyed it the last time I made it, I obliged. I felt guilty leaving my son without a dessert for him to snack on so I decided to surprise him by preparing these coconut balls. I know how much he likes them, and I wanted to do something to cheer him up after a long day at university. It certainly did the trick 🙂

Ingredients:

  • 3 eggs
  • 5 cups shredded coconut
  • 1 cup  less 2 tablespoons semolina
  • 1 cup less 2 tablespoons granulated sugar
  • one lemon’s zest
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • pinch of salt
  • icing sugar to cover the coconut balls (optional)
Preparation:
  • Whisk the eggs with sugar, vanilla and the pinch of salt until the mixture becomes light and fluffy
  • Add the lemon zest, semolina, baking powder, coconut and the melted butter and mix well
  • Preheat the oven to 180c, prepare the baking sheets for the oven by lining them with wax paper, no need for butter
  • Roll the dough in palm-sized balls and roll in the icing sugar (you can choose not to roll in the sugar, either way is yummy)
  • Bake in the oven for 20 minutes until they turn light golden color
  • Leave in the trays until cool

Lebanese Macaroon

The Lebanese Macaroon is very different from the French one. For one thing, the French Macaroons are made from almond powder, egg whites and sugar whereas the Lebanese ones are made out of semolina, oil and some spices. Also, the French Macaroon is baked in the oven while the Lebanese variation is fried in oil. It’s a very indulgent dessert, with a high amount of sugar (how much sugar syrup you add is up to you.) I’ll be posting the recipe for the French Macaroons sometime in the future; you can try it then and see the difference for yourself.

When I was young, I used to help my mother to roll the dough when she made macaroons. It would make me happy to sit on the floor, shaping the dough and rolling it on a straw chair to create a pleasant texture. It maybe difficult to find a straw chairs nowadays (its not necessary to use one) so rolling the dough on a cheese grater will create a similar effect.

This is my mother’s recipe and it is unmistakably delicious. Help yourself to a wonderfully indulgent dessert 🙂

Sugar Syrup Preparation:

  • Boil 2 cups of sugar in a cup of water, stirring occasionally
  • When done, add a teaspoon of lemon juice and a tablespoon of rose water
  • Keep warm until you use it in the macaroon

Macaroon Ingredients:

  • 500 grams fine semolina (3 1/2 cup)
  • 1 teaspoon of ground anise
  • 1 teaspoon dried instant yeast
  • 1 teaspoon sugar
  • 1/2 cup corn oil
  • 1 teaspoon fennel
  • warm water to form the dough, about 1 cup of water (have a bit more handy)
  • oil for frying
  • sugar syrup

Preparation:

  • Mix the semolina, fennel, anise, dried yeast, sugar and the corn oil together with one cup of water until it forms a soft dough (add only one cup at the beginning, but if you find that the dough still hard add more water little by little until the dough is soft and easy to manage)
  • Take a palm-sized roll of dough, roll it into a long shape (about one finger’s length) and roll it against the grater to give it texture
  • When you finish all the dough, deep fry them until they give a nice golden color
  • Remove from them from the oil and straight into the sugar syrup. Do this quickly so that the macaroons absorb the syrup

Melon Jam

Melon Jam is not very popular. For me however, eating it reminds me of fond memories from my childhood. When I was young, I used to go to my grand parents home often; one time, when I had arrived at their house, I could smell something very special cooking… but I couldn’t recognize it. Curious, I went to the kitchen and saw my grand mother peeling melon with the help of my mother and aunts, preparing sugar and other ingredients. That was the first time I saw anyone making Melon Jam.

Now, I make it for my own children and I feel the same way I felt when I saw how they made it for the first time. Today I am sharing this recipe with you. Trust me, you will love the nice aroma it makes.

A serving suggestion: Enjoy it with toast (as seen in the picture) or with croissant, crepes… Everything tastes better with this jam.

Ingredients:

  • 1 kg melon peeled and seeds removed
  • 700 gs granulated sugar
  • 100 ml red vinegar
  • 1 teaspoon ground cinnamon
  • 1/2 vanilla pod
  • 1 teaspoon butter

Preparation:

  • Cut the melon into small cubes
  • In a casserole, mix the melon with sugar and vinegar and bring it to a boil, stirring constantly
  • Add the butter, the ground cinnamon and the half vanilla pod, cut lengthwise
  • Let it boil for 15 mins
  • Lower the heat and let the jam cook for about 25 mins, stirring often
  • Remove the vanilla pod
  • To check if the jam is ready, place a drop of jam in a cup of cold water; if it forms a ball then the jam is ready
  • Place the jam in jars, close them and place them upside down for 10 mins
