Couscous With Chicken

The first time I ate couscous was at a newly-wed couple’s house in Abu Dhabi, a Lebanese man married to an Algerian lady. Of course, couscous is originally a Moroccan dish, but there are variations of it in different countries and she had prepared it the Algerian way. This was 25 years ago and at the time I though it must be very difficult to cook. Since then, I’ve learned that there are many ways to prepare this plate; it is a very flexible recipe and the choice of vegetables is completely up to you. It can even be cooked with meat, chicken or seafood. It is a very playful dish and I encourage you to add a bit of your own personality when cooking it.

Today I prepared couscous with chicken, my way. Use this recipe as a guide to finding your own favorite way of making it.

Ingredients:

  • 200 grams of chicken fillet
  • 1 large onion chopped
  • 1 red tomato peeled and diced
  • 1 large carrot sliced (or two medium sized carrots)
  • 1 cup of frozen peas
  • 1 tablespoon of tomato paste
  • 3 cloves of garlic
  • 1 teaspoon of dried coriander
  • 1/2 cup of chopped fresh coriander
  • salt, 7 spices
  • 2 tablespoon of corn oil

Preparation:

  • Cut the chicken into medium size cubes
  • Heat the oil in a casserole and fry the chickens until nice golden color then remove the chicken from the casserole
  • In the same oil fry the chopped onion for about 3 minutes
  • Add the carrot and tomato, cover the casserole and leave it for 5 minutes
  • Put the chicken back with the onion, carrot and tomato
  • Season with salt and seven spices as desired
  • Add the tomato paste and add water until it is enough to cover the chicken and vegetables
  • Let it boil on a high fire
  • Now put the peas, reduce the fire and cover the casserole
  • In the meantime heat some oil in a frying pan
  • Mix the crushed garlic with the fresh and dry coriander then fry them for 3 minutes
  • When the vegetables are tender, add the fried garlic with coriander over the vegetables and chicken
  • Prepare the couscous as instructed on the package (it is sometimes different depending on the brand, but usually very simple)
  • To serve put the couscous on a plate, and pour the chicken vegetables over

Homemade Pizza

What tastes better than pizza? A HOMEMADE PIZZA, of course. I always prepare the entire pizzas at home, from the dough to the ingredients and the filling to the way me and my children like it. In Lebanon, we have Lebanese pizza called “Man’oushe” which is made out of dough, same as pizza, but filled with either cheese or dried thyme mixed with some olive oil and it’s cooked in a large oven.

My 7 year-old grandson won’t eat any pizza except the one I made because “it is the best pizza ever!” You cant argue with that 🙂

Today I prepared the dough in the morning and let it rest for few hours to let it rise, and then I rolled it and filled it and cooked it; here’s how:

Ingredients for the dough:

  • 5 cups of flour
  • pinch of salt
  • 1/2 cup of corn oil
  • 1 tbsp of instant dried yeast
  • water

Preparation:

  • Put the flour, the salt and the oil in food processor and mix them for a few minutes
  • Then add the yeast and pour the water from the top slowly until all the ingredients form a soft dough
  • Rub a bowl with 1 spoon of oil and place the dough inside it and cover it with a towel
  • Let it rest and wait until it doubles in volume

In the meantime prepare the filling.

Ingredients for the filling:

  • 1 large onion, chopped finely
  • 3 red tomatoes cut in small dices
  • 1 small can of cut mushroom
  • 1/2 cup of black seedless and shredded olives
  • 1 tablespoon thyme, 1 tablespoon oregano
  • 1 tbsp of tomato paste
  • 1 cup grated mozzarella cheese
  • 1 cup grated emmenthal cheese
  • 1 tbsp of corn oil

Preparation:

  • In a pan heat the oil and fry the onions
  • Add the cut tomatoes to the onions and let it cook gently, then add the mushrooms
  • Now you can sprinkle the thyme and oregano
  • Add now the black olives and the tomato paste,  cover the pan and let it cook gently on a low heat
  • Preheat the oven on 180c
  • When the dough is ready and with a rolling pin, roll the dough and put it in a pizza tray
  • Sprinkle some thyme over the dough and put the filling on top
  • Cover with the two kinds of cheese and bake for about 25 minutes

AND THAT’S IT…. ENJOY:)

Vegetable Stew

Most children don’t like vegetables, especially zucchini and eggplant. They prefer to eat chicken nuggets, hamburger or anything else that can be found at a fast food restaurant. Even my siblings and I didn’t like those kinds of vegetables when we were young . My mother used to cook vegetables in this kind of stew with some meat to make us eat them (or else we’d be in trouble). It’s funny how we become our mothers… I too used this same recipe on my children. May it be as effective on your children as well:)

By the way, for those of you who can’t find the Lebanese Seven Spices ready mixed, here is a very useful guide to making it yourself.

Ingredients:

  • 200 grams lean beef cut into cubes
  • 2 potatoes cut into cubes
  • 1 large carrot cut into slices
  • 2 zucchini cut into slices
  • 1 large eggplant cut into cubes
  • 1 onion chopped
  • 2 red tomatoes chopped
  • 3 clove of garlic crushed
  • 1 tablespoon tomato paste
  • salt, seven spices, 1 tablespoon of dried coriander
  • cooking oil

Preparation:

  • In a pressure cooker, fry the meat with a little oil
  • When the meat is cooked, cover with water add one teaspoon salt and 1/2 teaspoon seven spices cook with the pressure cooker closed for 20 minutes
  • In the meantime, heat some oil in a pot and fry the the onion for 2 minutes then add the garlic and stir together for about a minute
  • Add the chopped tomatoes, cover the pot, lower the heat and leave it for 3 minutes
  • Remove the cooked meat from the pressure cooker and keep the water of the meat
  • Place the meat over the tomatoes, onion and garlic mixture

Kafta with Potatoes + New Blogger Award Nomination

Do you know Kafta? It is minced meat mixed with parsley and onion with salt and some spices. I remember when I was young, when my mother made kafta for lunch, everybody would rejoice. I should mention that besides my parents, we were 6 children: 4 boys and two girls. My mother used to make 3 main dishes for lunch to please us all. But when she decided to make Kafta with Potatoes, she would have to make a very large tray, bigger then our oven at home! My father had to take it to the bakery to cook it, after preparation at home it took 5 minutes to cook. Today I made a medium size tray and I cooked it at home but it took about half an hour to get cooked in the oven.

Ingredients:

  • 500 g minced meat
  • 1 cup of chopped parsley
  • 1 onion, finely chopped
  • 4 potatoes
  • 2 large tomatoes sliced,
  • 1 onion sliced
  • 1 tbsp  tomato paste
  • salt, seven spices
  • frying oil, cooking oil

Preparation:

  • Mix the minced meat with chopped parsley and chopped onion in a food processor (or you can take it ready from the butcher if he knows how)
  • Season with 1 small tsp salt and 1/2 tsp seven spices
  • Mix the meat by hand very well, take a small hand full and make a ball shape with it and flatten it then place it on a slightly greased oven tray
  • Preheat the oven to 200C
  • When all the meat is ready, place the tray in the oven for about twenty minutes, making sure to turn it over halfway through
  • In the meantime, peel the potatoes and cut them into slices then place into frying pan with oil; remove and drain when golden
  • Place the potatoes over the meat, then sliced onions and tomatoes on top
  • In a small bowl mix the tomato paste with about 2 cups of water, and season with salt and seven spices then place it over the meat and the potatoes in the tray
  • Cover the tray with aluminium foil and place it in hot oven for 20 minutes
  • Remove the foil and keep it in the oven for 10 minutes until the sauce thickens
  • Serve with rice

Bulgur with Tomatoes

For centuries, and especially during WW2, bulgur (or burghul in Arabic) has been a main ingredient in Lebanese cuisine. It is made out of whole wheat and has a lot of vitamins it is very nutritious.

  • Add the bulgur over the onion and mix all the ingredients well
  • Put the tomatoe paste, the salt and the spices
  • Cover with 2 cups of water, let it boil, then cover the pot and let it simmer on low fire untill all the grains absorb the water
  • Serve it with salad and vegetables.

Fattoush (Lebanese Salad)

“Fattoush” is a traditional Lebanese salad, made of mixed vegetables, bread and special seasoning and since this dish is made out of vegetables it is suitable for people fasting during lent.

My grandfather used to tell me the story of how the Lebanese started to make this salad. In some village in Lebanon, after a group of people finished their food and salad, if they were still hungry and there was remaining dressing in the salad, they would dip bread in the dressing and eat it. Eventually toasted bread found its way into the salad regularly, until finally they added more kinds of vegetables and adjusted the dressing to have what we know today as the traditional Fattoush.

And here is the recipe. I’ve left out the quantities because you can tailor it to your own taste.

Ingredients:

  • lettuce
  • tomato
  • cucumber
  • green onion
  • radish
  • purslane (baqle in arabic)
  • parsley
  • salt, olive oil, summak, olive oil, frying oil, arabic bread(pita)

Preparation:

  • Wash the lettuce, tomatoes and cut them
  • Peel the cucumber and cut it in dices
  • Peel the radish and slice them
  • Cut the green onion in slices
  • Peel the leaves of the purslane and wash properly
  • Chop few leaves of parsley
  • Cut the arabic bread and fry in the oil for few minutes until it becomes light brown color
  • Put all the vegetables in a serving bowl and mix together
  • Add the salt, summak and the olive oil
  • At the end put the fried bread and mix with the vegetables
  • You can decorate with few cherry tomatoes if desired.

Potato Salad with Eggs

Vegetables, potatoes and eggs. All children need their greens, but they never eat them! Because they’re stubborn and don’t know what’s good for them. But momma knows best 🙂

Use this for a side dish with steak or chicken.Personally I just have it as a light dinner, like I did tonight. You’re probably going to have these ingredients lying around in your kitchen so there’s no complication, and it won’t take you any longer than twenty minutes to prepare. Great for a lazy night in front of the TV.

Ingredients:

  • 3 potatoes
  • 3 eggs
  • some leaves of lettuce and Iceberg
  • 1 large tomato
  • 1 green pepper

Preparation:

  • Peel the potatoes, cut them in medium size cubes and boil with salted water
  • Boil the eggs
  • In the meantime wash the vegetables and cut them and put in a big serving bowl
  • Prepare the dressing for the salad by mixing one teaspoon of salt, a tbsp of mayonnaise, juice of one lemon and three tbsp of olive oil
  • When the potatoes and the boiled eggs  are cooked add them to the vegetables
  • Put the dressing and mix well.

Lasagna

The first time I ate lasagna was 20 years ago when I was still living in Abu Dhabi, and my friend invited me to her palce to have lasagna for lunch.  I thought at the time that making lasagna was complicated so I asked her for the recipe and, and she explained to me the way she did it. Since then, I have made some modifications to her recipe, and my children just love  lasagna I make. I am glad to share it with you today:)

Ingredients: The meat sauce

  • 200 gs of minced meat
  • 2 large onions
  • 4 red tomatoes
  • 1 tablespoon of tomato paste
  • salt, pepper
  • 2 tablespoon of cooking oil

The white sauce:

  • 100 gs of butter
  • 4 tablespoons of all purpose flour
  • about 4 cups of milk
  • salt, 1/2 teaspoon of ground nutmeg
  • 1/2 cup of shredded emmental cheese, and 1/2 cup of mozzarella

Preparation:

  • Heat the oil in a casserole and fry the onion chopped finely
  • Add the minced meat to the onion and fry until the meat is cooked
  • Cut the red tomatoes in small pieces and add it to the meat with the tomato paste
  • Season with salt and pepper and put the sauce aside

Now prepare the white sauce:

  • In another casserole melt the butter and add the flour, mix well
  • Pour the milk gradually and keep mixing with a whisk
  • When the sauce thickens put the fire off and put the salt and the nutmeg

Finally:

  • In a deep oven tray, put a large tablespoon of white sauce to cover the bottom of the tray
  • Put one layer of lasagna, cover it with meat sauce and then put the white sauce, repeat this until the tray is 3/4 full
  • On the top after the last layer of the white sauce sprinkle the cheese and put in hot oven for about 30 minutes

My son was with me in the kitchen while preparing the lasagna, and he came up with the idea to put the lasagna in a aluminium foil cup cake, he did, and it turn out to be beautiful. I think it is a good idea to make a “cup cake lasagna” if you have a party.
